box of cherry tomatoes
Lemon, salt and oil

You can peel the cucumbers if you like, but the skin gives the dish a more attractive appearance and a tasty crunch.

Directions

  • 1 Open the can of beans and strain. Wash the beans with tap water and rinse.
  • 2 Cut the ends off of the cucumber and then cut lengthwise. If there are lots of seeds, remove with a spoon. Dice the cucumber into small pieces and place in the bowl with the washed beans.
  • 3 Cut the tomatoes in half and add to the salad.
  • 4 Season with salt, lemon and oil.
  • 5 Open the avocado and place the edible part on a dish. Use a fork to mash quickly.
  • 6 Place a layer of avocado on the toast, then 3 tablespoons of salad and finish with your favorite hot sauce.
  • 7 Serve immediately.
