Crunchy Grilled Chicken Tacos

One of our favorite spring and summer time activities is having barbecues at home. Each year we have a few and we offer many dishes. One of our favorite recipes is the one for these crunchy grilled chick-en tacos. Every time I make them I add a creamy chipotle sauce and a store-bought mixture of lettuce, cabbage and shredded carrots, which you can find at your supermarket. These tacos are very simple yet delicious!

Ingredients

  • Salt and pepper, to taste
  • 2 whole chicken breasts
  • 1/2 cup mayonnaise
  • 1 chipotle pepper, crushed
  • 1 lemon
  • 1/2 cup mixture of lettuce, cabbage and shredded carrots
  • 8 taco shells from 1 box (4.6 oz) Old El Paso™ Crunchy Taco Shells (12 Count)

Directions

  • 1
    Season the chicken breasts and grill them. Once they are cooked, cut them into strips.
  • 2
    To make chipotle sauce, mix chipotle with mayonnaise and add lemon juice.

    Fill taco shells with the mixture of lettuce, cabbage and shredded carrots, add chicken and dress with the creamy chipotle sauce.

    Serve and enjoy!
