Expert Tips

You can also distribute the mixture into a mini-muffin pan instead of making them with your hands.

Directions

  • 1 Preheat the oven to 300º F. Line a cookie sheet with parchment paper.
  • 2 In a small bowl, mix together the egg whites and sugar until well combined.
  • 3 In a medium bowl, combine the cereal, coconut and cranberries. Add egg whites mixture and mix together well.
  • 4 Take 1/4 cup of the mixture in your hand. Gently press together so the ingredients combine, without breaking the Chex™ apart, and place on the cookie sheet. Repeat the same process until you’re finished with the whole mixture.
  • 5 Bake for about 20 minutes, or until the coconut begins to brown. Remove from the oven, let it cool and drizzle with the melted chocolate.

Oriana Romero The first time I made these crunchy Chex and coconut bites, I couldn’t stop eating them. I will warn you: they are addictive. The best part is that they’re very easy to make, and make a great idea for a gift or to bring to a gathering. Try them!
