Directions

  • 1 In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until tender.
  • 2 Stir in rice (from rice mix boxes) and wine. Heat to boiling; reduce heat to medium. Cook uncovered 2 to 3 minutes or until wine is almost evaporated. Add water, salt and seasoning packets (from rice mix boxes). Heat to boiling. Reduce heat to medium-low; cover and simmer 25 to 30 minutes, stirring occasionally, until almost all liquid is absorbed and rice is tender.
  • 3 Stir in cream and 1/2 cup of the cheese. Reduce heat to low; cook about 5 minutes, stirring occasionally, until slightly thickened. Stir in cashews. Sprinkle with remaining 1/4 cup cheese.
