Creamy Avocado and Chocolate Pudding

Even though we all eat avocados in salads, guacamole, sandwiches and other savory recipes, we aren’t very accustomed to seeing this ingredient in desserts. The truth is that the avocado is a fruit; it’s eaten in many countries as ice cream or served alone with honey and cottage cheese. It’s also used in juices and it’s a great addition to smoothies, making them extra creamy. Fans of raw food incorporate avocados in all kinds of preparations, including mousses, pies and puddings such as this one. The combination with cocoa or chocolate is perfect, making this dessert creamy and full-bodied.

Ingredients

  • 2 ripe avocados
  • 1/3 cup unsweetened cocoa
  • 1/3 cup honey or agave
  • 3/4 cup half & half cream
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1 tablespoon sliced almonds
  • Mint leaves

Directions

  • 1
    In a blender or food processor, add the avocado, cocoa, honey, half and half cream and vanilla. Blend until the mixture is creamy.

    Distribute into cups, alternating with the blueberries and refrigerate until well chilled.

    Decorate with more blueberries, sliced almonds and mint leaves.

    Serve the same day. If stored for longer the mixture will be a little bitter.

    You can use strawberries and meringue drops to give the pudding texture and a toquecito of color.

    Toasted coconut flakes can be added as well.

    Instead of half and half cream, use almond or coconut milk to make a completely vegan dessert.
