I present to you this delicious cream of pumpkin soup with chicken; I know you’re going to love it!

Ingredients

  • 1 large chicken breast, with bone and skinless
  • Salt and pepper, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • Nutmeg, to taste
  • Ground ginger, to taste
  • 2 lbs of pumpkin
  • 1 sprig of mint, parsley, or cilantro to garnish

Directions

    Wash the chicken well and remove the skin with a knife. Eliminate all visible grease.

    Place the chicken breast in a medium pot with hot water and cook for 30 minutes over medium heat with all of the condiments.

    Peel the pumpkin and cut it into large cubes. Once the chicken has cooked for 15 minutes, add the pumpkin for the remaining 15 minutes or until the pumpkin is soft.

    Salt and seasoning for taste, add more if you like.

    Prepare your blender or food processor. Debone the chicken and blend it with the broth and pumpkin until achieving a creamy consistency.

    Serve and decorate with mint, parsley or cilantro.

Expert Tips

    If you would like a cream with more flavor, you can add 2 tablespoons of milk powder and one tablespoon of butter when you're getting ready to blend the ingredients.
