Cream of Mushroom with Cashews

In my search of recipes and different combinations I found two ingredients that complement each other wonderfully in a soup: shitake mushrooms and cashews. This may sound a little odd, but the result is a delicious, creamy and hearty dish. A mom and homemaker, I always like to think of new ideas and recipes to add some variety to our daily menu and introduce my family to new flavors and ingredients. Ingredients

  • 1/2 lb of fresh shitake mushrooms, chopped
  • 1 garlic clove, finely chopped
  • 1 teaspoon olive oil
  • 1 teaspoon ginger purée
  • 4 cups water
  • 1 cup cashews
  • Salt and pepper to taste
  • 1/2 cup chives, chopped

Directions

  • 1
    Wash the mushrooms and dry them on a paper towel. Julienne them or cut them into small pieces.

    Finely chop the garlic and fry it in olive oil in a pot. Let cook for a few minutes, then add the mushrooms and parboil.

    Add the ginger purée and one cup of water. Let cook over low heat.
  • 4
    In a separate small pot, cook the cashews in one cup of water for 10 minutes. When they're soft, blend into a paste and add to the mushroom and ginger preparation.

    Add 2 cups of water and use a hand mixer to combine all the ingredients until you get a smooth consistency that isn't too thick.

    Season with salt and pepper and let cook for a few more minutes. Serve in a bowl with fresh chives.

Expert Tips

  • tip 1
    I recommend using shitake mushrooms, but if you can't find them, use portabella mushrooms or white button mushrooms, following the same instructions.

    If you want to add some extra smoothness to this recipe, add a tablespoon of cream to the dish before serving.
