Expert Tips

I recommend using shitake mushrooms, but if you can't find them, use portabella mushrooms or white button mushrooms, following the same instructions.

In my search of recipes and different combinations I found two ingredients that complement each other wonderfully in a soup: shitake mushrooms and cashews. This may sound a little odd, but the result is a delicious, creamy and hearty dish. If you want to add some extra smoothness to this recipe, add a tablespoon of cream to the dish before serving.

Directions

  • 1 Wash the mushrooms and dry them on a paper towel. Julienne them or cut them into small pieces.
  • 2 Finely chop the garlic and fry it in olive oil in a pot. Let cook for a few minutes, then add the mushrooms and parboil.
  • 3 Add the ginger purée and one cup of water. Let cook over low heat.
  • 4 In a separate small pot, cook the cashews in one cup of water for 10 minutes. When they're soft, blend into a paste and add to the mushroom and ginger preparation.
  • 5 Add 2 cups of water and use a hand mixer to combine all the ingredients until you get a smooth consistency that isn't too thick.
  • 6 Season with salt and pepper and let cook for a few more minutes. Serve in a bowl with fresh chives.
