Ingredients

Salad

Lettuce of choice (I used romaine lettuce with a handful of spinach)

package (12 oz) cranberries

teaspoons olive oil

oranges, cut into slices
4
oz goat cheese
1/2
tablespoon honey

Vinaigrette

tablespoons olive oil
1
tablespoon balsamic vinegar or red wine vinegar
Orange juice, to taste
Salt and pepper, to taste

Directions

  • 1 Preheat the oven to 275°F.
  • 2 Mix the cranberries with 2 teaspoons of oil and place them in a baking dish. Bake for 30 minutes.
  • 3 Wash, dry and cut the lettuce if necessary. Cut the oranges into slices in a container (to save the juice).
  • 4 Mix the goat cheese and honey in a separate container.
  • 5 Once the cranberries are baked and cooled, add them to the salad.
  • 6 Serve the dressing in a separate container or mix it in just before serving. Enjoy!
