Directions

  • 1 In a large non-stick skillet over medium-high heat cook diced bacon until crisp. Remove cooked bacon; drain.
  • 2 Add diced onion, celery, bell pepper, garlic and plantains to pan and sauté until plantains are tender and golden brown and vegetables are tender, about 5-8 minutes.
  • 3 Remove from heat and mash plantain mixture with potato smasher. Stir in cooked bacon and cranberry sauce, season with salt and pepper and serve warm.
