Ingredients

  • 1 tablespoon extra-virgin olive oil
  • Juice from 1 large orange
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 2 cups whole-wheat couscous, cooked
  • 1 cup nectarine wedges
  • 1/2 cup strawberries, chopped
  • 1/2 cup blueberries
  • 2 tablespoons almonds, sliced

Directions

    In a large bowl, whisk olive oil, orange juice, vinegar, garlic, salt and pepper until well combined. Spoon in cooked couscous and gently stir to combine. Toss to combine nectarine wedges, berries and almonds.

    If berries are not in season where you are, don’t fret! Use other fruit such as peaches, nectarines, pineapples and kiwis to add flair to your very own couscous fruit salad.
