tablespoons vegetable oil

garlic cloves, finely chopped

cup onion, finely chopped

cups beef broth

cup lentils, washed and drained

carrots, peeled and diced
2
potatoes, peeled and chopped into large pieces
1
lb pork meat, cut into large pieces
1
teaspoon ground cumin
Salt and pepper, to taste
Chopped cilantro, to taste
White rice, to taste
Avocado, to taste

You can use bacon, beef or chorizo instead of pork meat.

Directions

  • 1 Heat the oil in a large pot on medium low heat. Add garlic and onions and sauté for 5 minutes or until tender.
  • 2 Add broth, cover the pot and bring to a boil. Add lentils, carrots, potato, meat, cumin, salt and pepper. You can add more broth if desired. Cover the pot and bring to a boil. Reduce heat and cook for 35-40 minutes or until the lentils are tender.
  • 3 Once the lentils are ready, taste them and adjust the seasoning.
  • 4 Serve immediately with a little cilantro, a side of rice and avocado.

Lentil soup is one of the most popular soups in Colombian homes and it’s one of my favorites. I like to serve this soup with white rice and avocado. This lentil soup is perfect for a cold winter day because it’s very comforting.
