In Colombia, we talk about "guayabo" (hangover) when facing the consequences of intense partying the night before. Those of us who have suffered from this ailment, have desperately searched for a good antidote to help recover from all this lost energy. This homemade caldo de costilla or rib broth beef broth is one of our 'foolproof' cures that we truly enjoy. The special mix of beef ribs, water, potatoes, cilantro and green onion combine to create a potion with magical results!

Ingredients

  • 4 cups water
  • 1 lb beef ribs
  • 4 large potatoes
  • Fresh cilantro, to taste
  • 1 stem green onion
  • Salt, to taste

Directions

    In a large pot incorporate the water, beef ribs, a few sprigs of cilantro and a stem of green onion.

    Season with salt as preferred and cover the pot with a lid.

    Let simmer over low heat until the meat is tender.

    Meanwhile, wash and peel the potatoes.
  • 5
    Roughly chop the potatoes into pieces before adding to the stew; continue to cook over low heat.

    Next, remove the sprigs of cilantro and green onion stems. Check and adjust the seasoning as necessary.

    Serve immediately, garnished with a bit of diced cilantro on top.
