Directions

  • 1 In a large pot incorporate the water, beef ribs, a few sprigs of cilantro and a stem of green onion.
  • 2 Season with salt as preferred and cover the pot with a lid.
  • 3 Let simmer over low heat until the meat is tender.
  • 4 Meanwhile, wash and peel the potatoes.
  • 5 Roughly chop the potatoes into pieces before adding to the stew; continue to cook over low heat.
  • 6 Next, remove the sprigs of cilantro and green onion stems. Check and adjust the seasoning as necessary.
  • 7 Serve immediately, garnished with a bit of diced cilantro on top.
