My grandfather Antonio taught me many things. I grew up hearing stories about his beloved Lugo in Galicia, and about the natural and nutritious things the countryside has to offer. I used to love running over to him when he prepared cold cuts and cheese for friends and neighbors who visited the house. My fun lay in rolling up every cold cut slice with cheese and tasting it with a slice of bread. I still like it to this day and so does my family. That is why the all-time favorite starter in my home is a roll-up of cold cuts and cheese like the ones I show you here.
