Frituras de bacalao or cod fritters are a traditional Cuban food that are enjoyed by many because of their salty, fried goodness. Make some for your next gathering and watch as they go flying off the plate!

Ingredients

  • 1/2 cup vegetable oil
  • 1 lb dried and cured codfish
  • 4 eggs
  • 6 tablespoon flour
  • 1 tablespoon baking powder
  • 5 tablespoon onion, chopped
  • 2 tablespoon chopped parsley
  • 1/4 teaspoon ground pepper

Directions

    Soak the codfish in water for one hour. Drain and in fresh water, boil for about 10 minutes to remove excess salt.

    Once cooled, finely shred the bacalao with fingers. Mix bacalao with beaten egg and remaining ingredients.

    Heat oil in frying pan and scoop spoonful of bacalao mixture until golden brown. Sprinkle with salt as desired.

    You can also use frozen white Pollock or any white fish for similar results. Soak as instructed, but omit boiling since frozen fish will not be cured with salt.
