Spicy Oyster Cocktail

Oysters are wonderful mollusks considered an exotic food in many cultures. Oysters have a unique flavor and taste. That’s the reason why I use them in some of my recipes, to impress and please those who try them. Today I’m going to share a one-of-a-kind cocktail, based in oysters. I created it while looking through the different recipes I’ve tried - not only in my country (Venezuela), but also on different Caribbean islands. As a little girl, I remember my father buying oysters from peddlers on the beach, right there on the seashore; we would eat them with just a few drops of lemon and they tasted like heaven. These days, those same oyster peddlers have gotten creative and make magical cocktails with oysters and other delicious and ingredients that awaken your senses. I’m sure that you will feel the same way when you try this recipe!

Ingredients

  • 24 oz fresh oysters, no shells
  • 1 large red onion, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 3 tablespoons lemon juice
  • 1 teaspoon rocoto paste (hot Peruvian chili)
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup tomato sauce
  • 1/2 cup cocktail sauce
  • 1 tablespoon sweet chili sauce
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Coarse salt (if desired, for garnish)
  • 4 lemon slices (if desired, for garnish)

Directions

    In large bowl, mix all ingredients. Season with salt and pepper to taste.

    Preferably serve in Martini glasses. Rub the rim of the glasses with the lemon juice and coarse salt.

    Garnish with chopped cilantro and a lemon wedge on rim of the glass.

    Chill the Martini glasses ahead of time to preserve the cocktail’s freshness.

    If you’d like a more Latin cocktail, add peeled and diced avocado.
