Directions

  • 1 Rinse quinoa thoroughly under cold water, strain and place in a medium pot along with coconut milk, agave, vanilla extract, ground cinnamon and salt. Bring to a boil, stir, reduce heat, cover and simmer for 20 minutes.
  • 2 After 20 minutes, remove lid, stir and continue simmering for 10 more minutes, or until quinoa has absorbed most of the coconut milk.
  • 3 Remove from heat, serve warm garnished with toasted coconut or allow to cool, place in fridge and serve cold as a dessert.
