For more color and flavor, mix in 1/4 cup of wild rice with the long-grain rice.

Directions

  • 1 In a blender, process the onion and garlic with the chicken stock.
  • 2 Heat the oil in a medium-sized pot on high heat. Sauté the rice with the oil, stirring continuously until the rice is lightly golden.
  • 3 Carefully transfer the contents in the blender to the pot with the rice. Season with salt.
  • 4 As soon as it starts to boil, reduce to low heat, cover with lid and let cook on low for 20-30 minutes, or until all the liquid has evaporated. Remove from heat. Add lemon juice and zest and mix in. Cover and let rest for 5 minutes.
  • 5 Add fresh cilantro just before serving. Serve and enjoy!
