The first time I tried this dip known in Puerto Rico as cielito lindo (pretty sky), I was at my brother's house. My mother-in-law would prepare it for all of our family reunions and it was always delicious. I immediately took note of all the ingredients in it and it has since then become a favorite at my parties too. For me, it was love at because I was instantly enamored with this dip. It's perfect for birthday parties because you can prepare the amount you need depending on how many guests you're having, so you can serve it in either individual cups or buffet style so everyone can serve themselves the amount they want.

Ingredients

  • 2 (8 ozs each) containers of cream cheese
  • 1/2 cup of sour cream
  • 2 cans (16 oz) Old El Paso™ Traditional Refried Beans
  • 4 - 6 cups of iceberg lettuce, chopped
  • 28 oz medium salsa
  • 4 chopped tomatoes
  • 4 - 6 cups of finely shredded cups of finely shredded cheddar and mozzarella

Directions

    You'll need 2 13x9-inch baking trays, plastic or aluminum.

    Let the cream cheese soften and mix it with the sour cream. Set aside.

    Spread a layer of beans in each of the trays. Then one layer of cream cheese, lettuce, tomato sauce, tomatoes and top of with the cheeses.

    Serve with Mexican tortillas or nachos.

    You can substitute or add any ingredients you like, for example, using only cream cheese or only sour cream.
