Pork Chops in Red Wine Sauce

Last year we celebrated Father's Day in Mexico with the whole family. It was a bittersweet celebration, because one of my uncles had passed away a few weeks before. But there was also a lot of happy moments. All the kids sang for us, danced their favorite songs and were so happy to be with their fathers. The women in the family took on the task of cooking, but before we started, we asked the men what they wanted and the unanimous answer was "meat!" So that's what we made. This is my recipe.

Ingredients

  • 4 pork chops, 1- inch thick
  • Salt and pepper, to taste
  • 1 1/2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 1/2 cup of onions, finely chopped
  • 4 garlic cloves, minced
  • 1 1/2 cup of red wine
  • 1 cup of beef broth
  • 1 teaspoon of dried thyme

Directions

    Generously season the pork chops with salt and pepper.

    Heat the oil and butter in a saucepan and add the pork chops. Let them cook on each side for 3-4 minutes. Remove from the saucepan.

    Add the onions and garlic to the oil and cook until they've browned, about 6-7 minutes. Add the wine and let boil for 6 minutes.

    Add the thyme and broth to the wine and then add the pork chops. Cook until the meat is completely cooked, about 10-12 minutes. Flip half way through.

    When the chops are cooked, remove from the pan. Let the sauce boil again at medium low heat until it reduces and thickens a bit.

    Serve the meat bathed in the sauce with rice, salad or vegetables.

Expert Tips

    If you don't have beef broth use chicken broth.

    You can use any other herb instead of thyme, like marjoram, rosemary or bay leaf.
