Chorizo Fried Dumplings

I like to make fried dumplings at least once a month. My boyfriend loves them and so does our 4-year-old son. I usually make them with shrimp or pork but lately I've been craving the fusion of Mexican with Chinese food. My boyfriend has a lot of family in Mexicali, where that fusion is a hit. We go there pretty often to visit family, so this mix of cultures is usual for my taste buds and that's why I've decided to make chorizo fried dumplings. I make it the exact same way I usually make pork or shrimp dumplings only I cook the chorizo on the side for a little bit first before I wrap it in the dumpling. Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 lb ground pork
  • 1/2 lb pork chorizo
  • 1/2 cup kimchi, thinly sliced
  • 1/4 cup green onion, thinly sliced
  • 1/4 cup carrot, grated
  • Salt and pepper, to taste
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 package wonton wrappers or gyoza wrappers (usually 30 to 48 wrappers)

    In a large frying pan over a medium flame add in 1 tablespoon of vegetable oil and allow it to get hot.

    Add in the ground pork and chorizo. With a spatula, break up the meat and cook for 15 minutes, mixing and combining the meat.

    Then add in kimchi, green onion, and carrot. Cook for an additional 10 minutes.

    Season with salt and pepper. Remove from flame and allow to reach room temperature.

    Place mixture in the fridge for an hour.

    In a small bowl, mix cornstarch and water to make a wash. Set aside.

    Fill each wrapper with 1 teaspoon of chilled pork mixture.

    Dip your finger in the wash and moisten the edges of the wrapper with wash.

    Lift one edge of the wrapper and bring it to the other side of the wrapper and crimp the edges sealed with your fingers.

    In a non-stick frying pan over a medium flame add in 1 tablespoon of vegetable oil and allow to heat.

    Add in as many dumplings as you can (between 15 to 17) and cook for about 3 minutes or until one side is browned. Then pour in 1/3 cup water and cover pan with a lid. Cook until water is absorbed.

    Repeat process until all dumplings are cooked.

    Serve with soy sauce and chile.
