For the cupcake mix

For different options, use vanilla or chocolate cake mix.

Directions

  • 1 For cupcake mix: Preheat oven to 375° F.
  • 2 Prepare a regular size muffin pan with liners.
  • 3 In a large bowl, combine cake mix, water, oil, vanilla extract and eggs, and use an electric mixer to mix on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping the bottom of the bowl to mix well. Divide mixture evenly on muffin baking dish, filling up 2/3 of each mold.
  • 4 Bake for 18-22 minutes, or until a toothpick inserted in the middle of the muffin comes out dry. Remove from molds and let cool on wire rack for 30 minutes, approximately.
  • 5 For frosting: Beat butter and sugar. Add dulce de leche and vanilla, and beat on high speed for 20 seconds.
  • 6 Add milk, a spoonful at a time until the butter mixture reaches the desired consistency. Add a pinch of salt and beat on high speed for another 20 seconds. Use immediately, or cover and refrigerate until you are ready to decorate cupcakes.
  • 7 Cover cupcakes in frosting and decorate with graduation hats.
