Chocolate and Coconut Easter Eggs

In a just a few days we'll be celebrating Easter and I'm sure you've already started searching for special recipes and ideas for this wonderful time… well, don't look any further! These chocolate and coconut eggs are delicious and easy to make. What I like most about them is that they can be personalized. Write the name of each of your guests and wrap them up in decorative plastic. To make them even more special, simply use a ribbon to close the bag and decorate with spring flowers. I'm sure everyone will love them!

Ingredients

  • 4 ozs cream cheese, at room temperature
  • 1 tablespoon butter, at room temperature
  • 2 cups powdered sugar
  • 1/2 cup grated sweetened coconut
  • 1 1/2 cup chocolate chips
  • 1 tablespoon shortening oil
  • 1 cup confectionery coating (optional)

Directions

    Beat the cream cheese and butter until soft in a medium bowl with the help of a hand mixer.

    Add the sugar and coconut, and then beat until everything is well combined. Cover the mixture and refrigerate for 1 1/2 hour.

    Cover your hands in powdered sugar and take a portion (the size that you want the eggs) of the coconut mixture and shape them into eggs. Place them on a baking dish covered in wax paper. Freeze for 2 hours.

    Mix the chocolate and oil in a medium bowl that is microwavable. Place in the microwave for 30 seconds, remove, mix with a spatula and repeat the process until it’s completely melted.

    Remove the eggs from the refrigerator, submerge each in the chocolate mixture until they're completely covered. Place them back on the wax paper, refrigerate until they've hardened, about 5 minutes. If you would like to decorate them, drizzle them in different colored confectionery coating.

    Refrigerate them until you’re ready to serve.
