Chipotle Chicken Wraps with Avocado Salsa

Ingredients

For the wraps:

large chicken breasts, cooked and shredded

can chipotle chili pepper

tablespoons water

tablespoons red onion, finely chopped

lettuce leaves

cup Progresso™ black beans, drained

For the avocado salsa:

whole avocado, peeled and diced

juice of one lemon

Directions

  • 1 In a blender or food processor, purée the chipotle, water and red onion.
  • 2 Mix the chipotle sauce and shredded chicken together. Set aside.
  • 3 To prepare the avocado salsa, combine the mayonnaise, cumin, avocado, lemon juice, salt and pepper in a small bowl. Stir well.
  • 4 When ready, spread the avocado salsa over a tortilla and place a lettuce leaf on top. Follow up with a portion of chicken, beans and tomatoes.
  • 5 To close, join the left and right edges in the middle of the wrap. With both thumbs lift and roll the bottom edge over the ingredients, continuing to the end. Cut in half diagonally for a deli style presentation.
