When the cool weather hits us hard, it’s time to get creative in the kitchen to keep us warm and cozy. Chili is a great, comforting and hearty dish that can pass as a full meal. When we are feeling like something not too heavy at home, I like to prepare this seafood chili for my family.

Ingredients

  • 1 tablespoon grapeseed oil
  • 1/2 cup onion, chopped
  • 2 garlic cloves, chopped
  • 3/4 cup canned diced tomatoes
  • 1 teaspoon chicken flavor bouillon
  • 1 green bell pepper, chopped
  • 2 carrots, chopped
  • 4 cups water
  • 1/4 cup long grain white rice
  • 1 1/2 cup canned red kidney beans
  • 1/2 lb raw shrimp, peeled and tail off
  • 1/2 lb firm white fish (such as tilapia), cut in bite-size pieces
  • 1/2 teaspoon black ground pepper

Directions

    Heat oil in a 3-quart stock pot over medium heat. Add onion and garlic and cook until tender. Add tomatoes and bouillon and stir for 2 minutes. Add bell pepper and carrots; add water and lower heat to low medium; cover and let simmer for 15 minutes.

    Add rice. Cover and cook for 10 minutes. Add beans, shrimp, fish and pepper. Cook for 7 minutes more or until shrimp and fish has cooked through.

    Remove from heat. Keep stockpot covered and let rest for 10 minutes before serving.

    Serve and enjoy!
