This chicken with tomatillo sauce is delicious and easy to prepare. It's perfect for a simple and delicious dinner during the week. I love the flavors of this juicy chicken! Serve it with rice and a green salad if you like. Everyone in my house loves this recipe, so much so that we're planning on making it again and again!

Ingredients

  • 1 cup yogurt
  • 1/2 teaspoon sugar
  • 4 garlic cloves, mashed
  • 1 cup fresh cilantro, chopped
  • 3 tomatillos, peeled and chopped
  • 3 tablespoons lemon juice
  • 1/4 teaspoon ground cumin
  • 1/2 jalapeño pepper chopped
  • Salt and pepper to taste
  • 4 chicken breasts, boneless and skinless

Directions

    Mix the yogurt and the rest of the ingredients (except the chicken) in a large bowl.

    Pour half of this sauce in a sealable plastic bag.

    Add the chicken breast and refrigerate for 30 minutes or all night.

    Put away the rest of the sauce.

    Preheat the oven to 375°F.
  • 6
    Place the chicken in a baking dish and pour the marinade over it.

    Bake for 20-25 minutes.
  • 8
    Cover with the rest of the sauce and serve with rice (optional).
