Expert Tips

If you don't have a hand mixer, use a blender, but don't fill more than half way. Return it to the pot, heat and adjust the seasoning.

You can replace the cumin for any other spice you like: paprika, chipotle or curry.

Directions

  • 1 Season the chicken with salt, pepper and lemon juice.
  • 2 Heat the griddle to medium high heat.
  • 3 Heat the tablespoon of oil in a pan. Add the onion and cook for 5-8 minutes.
  • 4 Heat the chicken on the griddle for 4-6 minutes on each side to allow it to brown and seal in the juices. Then set the heat to low, cover the pan and cook for 10 more minutes or until it reaches an internal temperature of 165°F. Let sit for 5 minutes while covered for 5 minutes before serving.
  • 5 Strain and wash the garbanzos over running water. Add them to the onions, season with salt and 1/2 teaspoon of cumin. Add 3/4 cup of boiling water. Cook for 5-8 minutes.
  • 6 Use a hand mixer to process the onion and garbanzo. Mix until you have a smooth purée. Adjust the seasoning to your liking.
  • 7 Serve the chicken with the garbanzos.
