Bento boxes have become very popular in recent years, especially for kids' school lunches. A bento box is basically a complete meal. It makes transportation easy and convenient. If we think about it, a bento box can be perfect for a picnic and they're more practical than a picnic basket, don’t you think? I'll show you how to make a simple bento box with delicious golden chicken tacos in less than 30 minutes.

Ingredients

  • 2 tablespoons olive oil
  • 2 raw chicken breasts, cut into 1/2-inch cubes
  • Salt and pepper, to taste
  • 2 Roma tomatoes
  • 4 tablespoons white onion, finely chopped
  • 1 Serrano pepper, finely chopped
  • 10 fresh cilantro sprigs, finely chopped
  • 2.5 oz queso fresco, grated
  • 1 box (4.6 oz) Old El Paso™ Crunchy Taco Shells (12 Count)
  • 2 avocados
  • 2-3 cups spinach or lettuce, washed and dried

Directions

    Heat the oil in a medium-size pot. Add chicken and season with salt and pepper, cook on medium-high heat for 20 minutes or until the chicken is completely cooked.

    Preheat oven to 325°F.

    You'll need a large bento box or a large plastic container and 4 smaller containers.

    While the chicken cooks, dice the Roma tomatoes, combine with white onions, Serrano pepper, cilantro and season with salt. Place this mixture in one of the bento box compartments or in a small plastic container. Seal it.

    Add the grated cheese to another compartment or another small container. Seal it.
  • 6
    Bake the tacos following the instructions on the package.

    Peel and cut avocados into small cubes and add them to another container. Seal it.

    Everything is now ready for the bento box.

    Place the spinach or lettuce on the bottom of the bento container or large container, place tacos over the spinach and the meat on the side, in one of the compartments or in one of the containers with a lid.

    Place containers holding cheese and avocado inside bento box. Cover with its lid.

    Serve and enjoy your picnic.
