cup white onion, sliced

cups bell peppers, sliced

heaping tablespoon Old El Paso™ taco seasoning mix

ounces cooked chicken, cubed

eggs
3
tablespoons whole milk
1 1/2
cups grated cheese, to taste
Salt and pepper to taste

Expert Tips

Save time by using frozen bell pepper strips. Cook them the same way you would fresh peppers.

If you like spicy, add 1-2 chopped serrano chilies or 1/4 teaspoon of dry red chili flakes.

For a smoky taste, use rotisserie chicken.

Directions

  • 1 Preheat the oven to 375°F.
  • 2 Heat oil in a skillet and sauté the onion until translucent. Add the bell peppers and taco seasoning, and cook until peppers are a little soft.
  • 3 Grease the baking dish with cooking spray. Cut biscuits into 6-8 pieces each and spread them around the bottom of the dish.
  • 4 Add the chicken to the onion and pepper mix and cook another minute.
  • 5 Whisk eggs lightly with a fork, until well blended. Add milk and cheese. Lastly, add the chicken and bell pepper.
  • 6 Pour the egg and chicken mixture over the biscuits and bake for 25 minutes or until firm and the cheese is golden.
