Ingredients

  • 6 cups bite-size pieces mixed salad greens
  • 1 package (6 oz) refrigerated grilled chicken breast strips, cut in half if necessary
  • 1 cup fresh strawberry halves
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/4 cup fat-free raspberry vinaigrette dressing
  • 1/4 cup honey-roasted peanuts
  • 2 tablespoons crumbled blue cheese

Directions

    In large bowl, toss all ingredients except peanuts and cheese until evenly coated with dressing. Sprinkle with peanuts and cheese.

    If you prefer a fruitier flavor, you can use raspberry vinaigrette in place of regular vinaigrette. The salad, however, will have pink overtones.
