Directions

  • 1 Heat the oil in a pot on medium-high heat. Season the pieces of chicken with salt and pepper, then brown them on all sides.
  • 2 Remove pieces of chicken from pot. In this same oil, sauté the onion with a pinch of cumin.
  • 3 Add yellow pepper and cilantro. Stir well and cook for 5 minutes.
  • 4 Add peas, bell pepper, corn, rice, and pieces of chicken. Add chicken stock.
  • 5 Cover with a lid and cook for 30 minutes on low heat.
  • 6 Add potatoes and cook for 10 minutes.
  • 7 Remove from heat and serve immediately.
