Crisp tortillas, sautéed onions and juicy tomatoes are scrambled with eggs to give you an easy dinner for one! This recipe is also great for breakfast. Top with your favorite salsa and enjoy.

Ingredients

  • 2 corn tortillas, diced
  • Oil for frying
  • 1/4 medium onion, diced
  • 1/2 medium tomato, diced
  • 2 eggs
  • 1/4 cup shredded cheese

Directions

    Heat oil in a large skillet over medium high heat. Lightly fry diced tortillas until golden and crisp. Remove fried tortillas with a slotted spoon, drain on plate lined with paper towels.

    Return pan to heat and sauté onion until light and translucent, for about 3 minutes.

    Add tomato, season with salt and pepper and continue to cook for another 2 minutes.

    Return crisp tortillas to pan, add eggs and scramble until eggs coat tortillas and set, about 3 minutes. Serve warm with cheese.
