Directions

  • 1 Heat oil in a large skillet over medium high heat. Lightly fry diced tortillas until golden and crisp. Remove fried tortillas with a slotted spoon, drain on plate lined with paper towels.
  • 2 Return pan to heat and sauté onion until light and translucent, for about 3 minutes.
  • 3 Add tomato, season with salt and pepper and continue to cook for another 2 minutes.
  • 4 Return crisp tortillas to pan, add eggs and scramble until eggs coat tortillas and set, about 3 minutes. Serve warm with cheese.
