Last week I made this tasty cauliflower-based vegetarian ceviche, with avocado and lime. It’s full of flavor and a tasty alternative for those who do not eat fish or seafood. Its taste doesn’t take a back seat to traditional ceviche. Although we are not vegetarians at home, we do enjoy a few days without meat. For this ceviche, I used a versatile ingredient that goes a long way in many dishes: cauliflower. I hope you enjoy this vegetarian ceviche and encourage you to make it at home soon.

Ingredients

  • 1 Hass avocado ripe, fresh, cut in half, peeled and diced
  • 1 cup cauliflower, diced
  • 2 tomatoes, diced
  • 1/3 cup red onion, finely chopped
  • 1 tablespoon jalapeño pepper, minced
  • 1 clove garlic, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Directions

    In a large bowl, combine avocado, cauliflower, tomato, onion, jalapeño, garlic, cilantro, lime juice, salt and olive oil.

    Transfer to a serving bowl and enjoy with French fries.

    Serve as an appetizer or a side dish.

    Large avocados are recommended for this recipe. A large avocado averages about 8 ounces so adjust the amount accordingly if using smaller or larger size avocados.
