This cauliflower rice casserole with vegetables is a delicious option if you want to add more vegetables to your family’s diet. Making the cauliflower rice is easy because you only need two things: cauliflower and a food processor. The vegetables that we use in the recipe are optional, you can make your own combination using whatever you have in your fridge. You can also use your favorite spices: Mexican, Italian, spicy or bittersweet. Make it your own with your special touch.

Ingredients

  • 1 (7 oz) can of mixed vegetables, to taste
  • 1 medium-sized cauliflower, cut into small florets
  • 1 teaspoon garlic powder
  • 2 teaspoons spices to taste
  • 8 oz Oaxaca, Mozzarella or a mix of cheeses, divided

    Preheat the oven to 400°F.

    Open the box of vegetables, cut the plastic bag and empty the contents into a pan. Add two tablespoons water, cover and cook over medium heat for 5 minutes.

    While cooking the vegetables, put a layer of cauliflower florets in the food processor and pulse until you get the “rice”. It takes about 18-22 pulses per batch. Repeat until you’ve processed all the florets. Don’t put them all in the processor at the same time because the sizes will be uneven. It usually takes 3-4 batches.

    Mix the cauliflower “rice” with the cooked vegetables, garlic powder, spices and half the cheese. Pour into an oven-proof container or pan.

    Cover with aluminum foil and bake for 10 minutes. Then, uncover it and bake for 20 more minutes. Take it out of the oven, add the remaining cheese and put it back in the oven for 5 more minutes or until the cheese has melted and is golden brown.

    Set aside for 5 minutes and serve.

    If you want to save some time, buy the cauliflower already chopped into florets. You can find the bags in the fruits and vegetables aisle at the supermarket.
