Cauliflower ‘mashed potatoes’ are a delicious alternative to traditional mashed potatoes. I make it often at home because my children love it. Its texture and appearance is very similar to traditional mashed potatoes. Just like mashed potatoes, you can add different ingredients to get different flavors in this thick and creamy side dish. You can serve it with meat, chicken or pork. I hope you like this easy and delicious recipe as much as my family and I do.

Ingredients

  • 2 medium heads of cauliflower
  • 2 garlic cloves, whole
  • 2 tablespoons sour cream
  • 2 tablespoons cream cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped
  • Nutmeg, grated, to taste

Directions

    Wash and cut the cauliflower. In a pot with water place the cauliflower and the garlic cloves. Add 1/4 teaspoon salt. Let the cauliflower boil until it softens.

    Remove the water and add the sour cream, cream cheese, 1/4 teaspoon salt and pepper.

    Using a food processor, grind the ingredients until you obtain the right texture.

    Add salt, pepper and nutmeg to taste.

    Top with the green onions. Serve immediately.
