Directions

  • 1 In 10-inch nonstick skillet, heat oil over medium heat. Add onion and sweet potatoes; cook about 5 min, stirring occasionally, until light brown. Reduce heat to low. Cover; cook 10-12 min, stirring occasionally, until potatoes are tender.
  • 2 Stir in brown sugar and jerk seasoning. Cook uncovered about 3 min, stirring occasionally, until glazed. Sprinkle with parsley.
