  • 1 Put 2 tablespoons of butter and the onions in a pan over medium heat and cook for 5 minutes, stirring frequently until golden.
  • 2 Place the mashed potatoes in a container along with the caramelized onions, arti-chokes, the rest of the butter, milk, salt, and pepper. Mix well.
  • 3 Form the croquettes and dip them in the eggs and then the breadcrumbs.
  • 4 Heat oil in a pan and, when hot, drop in the croquettes. Cook for 5 minutes or until golden.
