Directions

  • 1 Boil water in a pot at high heat. Add salt.
  • 2 Pour the cappelletti in and cook for 10 minutes.
  • 3 Add the asparagus and cook 4 more minutes or until the asparagus has softened and the cappelletti are almost how you like them.
  • 4 In the meantime, boil the cream in a large saucepan. Season with salt and pepper and let it reduce a bit.
  • 5 Strain the cappelletti and pour into the saucepan with the cream. Stir well and serve immediately with parmesan cheese.
  • 6 Serve with a green salad.
