Every year, as winter starts to loom around the corner, I always hit the market to grab all the basic necessities to make my favorite comfort food: caldo de pollo (chicken soup). There's nothing better than coming home after a long day and opening the fridge to find a little something cozy to eat and warm my belly. And when people come over, it's such a nice thing to have a pot of chicken soup on the stove ready to be shared. It's super easy to make, too, basically requiring just 5 or 6 veggies and some chicken. I remember as a kid, every time anybody got sick during the winter, there was my grandpa Sando, scuttling about the kitchen making a pot of caldo de pollo. It just represents wholesome goodness to me. And it fills me with that holiday spirit as I eat it with a big smile on my face.

Ingredients

  • 4 quarts water
  • 1 whole chicken, cut into pieces
  • 1 whole onion, cut into pieces
  • 3 garlic cloves
  • 3 celery stalks
  • Cilantro, to taste
  • Salt and pepper, to taste
  • 3 carrots, cut into 3-inch pieces
  • 3 potatoes, each cut into 4 pieces
  • 2 zucchini, cut into 3-inch pieces

Sides:

  • Mexican rice
  • Lime or lemon
  • Corn tortillas

Directions

    In a large pot filled halfway with water, add the chicken, onion, garlic cloves, celery, cilantro, salt, pepper and carrots and heat over a medium flame. Cover the pot with a lid and bring to a boil.

    Once it boils, add in the potatoes and zucchini. Cover the stew again and lower the flame to a simmer. Cook for an additional 40 minutes or until the veggies are fork tender.

    Serve hot with Mexican rice and lime. Eat with corn tortillas.
