Baked Zucchini with Feta, Onion and Basil

Now that spring has started, we have begun to see seasonal fruits and vegetables pop up, like green and yellow zucchini. This is why I would like to offer you this easy and simple recipe. Zucchini is a delicious veggie that is very easy to prepare. You can use it in stuffing, salads. They can be boiled or baked, they can even be used in desserts and breads.

Ingredients

  • 2 green zucchini
  • 2 yellow zucchini
  • 1 white onion, julienned
  • 3 garlic cloves, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/2 cup feta cheese
  • 1/4 cup basil, chopped

Directions

    Preheat the oven to 375°F. You'll need a rectangular mold with cooking spray.

    Wash and cut the zucchini into slices or halves. Add all the ingredients to a bowl and mix well until all the ingredients are evenly distributed.

    Pour into the mold and bake for about 25 minutes.
  • 4
    Remove from the oven and sprinkle with a little more cheese and then bake again for 15 more minutes. Serve hot.
