Expert Tips

To save time you can grate the carrot rather than cut into thin strips or buy carrots pre-chopped.

These cabbage and carrot tortillas are a delicious addition to any main dish. Personally I love this option because I tend to get bored of rice and potatoes all the time. If you want to give it a touch of color you can use a mixture of green and purple cabbage. I serve it with a bit of sour cream, as this gives you a perfect contrast to the flavor of the vegetables. Enjoy!

Directions

  • 1 In a medium bowl mix the cabbage, carrots and onions. Sprinkle in the flour and mix until most of the vegetables are covered with flour.
  • 2 Add the beaten eggs and cayenne pepper, then mix until well combined. Season with salt and pepper to taste.
  • 3 Place the oil in a skillet over medium heat and allow it to warm. When the oil is hot add 1/2 cup of the vegetable mixture. Use a spatula to mash it down a bit and give round-cake form. Let cook for 2-3 minutes, or until golden, turn and cook the other side. Remove from pan carefully and place on a plate with paper towels to absorb excess fat. Repeat the same procedure with the remaining mixture.
  • 4 Serve hot as an accompaniment to your main course.
