Expert Tips

You can use this same recipe, swapping out the blue cake mix with a white cake mix, to make it any color you like. Simply add drops of food coloring to the white cake mix.

Directions

  • 1 Preheat the oven to 350ºF.
  • 2 In a medium-sized bowl, combine the cake mix, butter and egg with a wooden spoon. Cover and refrigerate for 15 minutes.
  • 3 Line 2 baking sheets with non-stick baking paper.
  • 4 Make 1-inch balls out of the cake mix. Arrange the dough balls on the cookie sheets, leaving some space between each one since they will expand while in the oven.
  • 5 Bake for 8-10 minutes, or until the bottom of each "pie" is lightly golden brown. Remove from the oven and transfer to a cooling rack. Let cool completely.
  • 6 In a small bowl, mix the frosting with the food coloring.
  • 7 Spread the frosting on the flat side (the bottom) of a "pie" or cookie, and cover with another cookie to form a whoopie. Repeat with all the cookies. Serve.
