Blini with Cream and Berries

My cousin is getting married and I'm so excited because they've put me in charge of the preparations. I'm letting them hold the event at my house because we've got a big yard. Because of my experience in catering and event planning, being in charge of the wedding, the decorations, and the buffet is truly fun for me. They want a buffet with variety with a little bit of everything, beef, chicken and fish, as well as salads, rice and delicious pastries. Obviously we'll have a wedding cake, which my mother will make; traditionally she prepares all the cakes for special occasions in my family. We will also have other desserts, like blini with cream, caramel, strawberries and blackberries. They're delicious, spongy and decorative. Blini are like mini pancakes or crepes. Ingredients

  • 1 cup of white granulated sugar
  • 2 cups of Bisquick™ Original Pancake and Baking mix
  • 1 cup of buttermilk
  • 2 eggs
  • 2 tablespoons of melted butter
  • 2 containers of strawberry or regular cream cheese (12 oz each)
  • 20 fresh raspberries
  • 20 fresh blackberries, washed
  • 40 mint leaves, washed

Directions

    Place a can or quesillera on the stove with the cup of sugar at medium low heat. Let the sugar melt little by little for about 4 minutes. Use a silicone glove to grab the can from time to time to move it in circles to allow the sugar to melt evenly and prevent it from burning.

    When the sugar is completely melted and browned, remove from the heat carefully and spread the caramel over a flat metal tray. Let cool. Once its cold, hit the tray on a flat surface to break the candy into pieces. Place these pieces in a plastic bag and softly hit with a kitchen hammer, so that It's in small pieces, but not pulverized. Keep in a cool, dry spot.

    Place the 2 cups of pancake mix, buttermilk and eggs in a bowl and mix using a hand mixer until everything is well incorporated.

    Add a tablespoon of melted butter to a very large pan then use a silicone brush to cover the entire surface, cook on high heat. Once hot, lower the heat. Slowly pour one tablespoon of the mixture (using measuring spoons) to the pan, repeat this to keep forming the blini but keep the separated so that they don't stick and remain round.

    Flip them when holes begin to form on the surface and cook on the other side, should take 3 minutes total. Once ready, keep them fresh in a plastic container in the refrigerator until you're ready to prepare them. If you’re going to prepare them right away, pour the cream cheese into a pastry sleeve and decorate each blini with a bit of cream and blackberries or raspberries and then decorate with a mint leaf. Sprinkle the shattered candy on the blini. Serve immediately or refrigerate, carefully and covered until ready to serve.

    The blini can last one day in the refrigerator if well contained, decorate when you're ready to serve.
