Black Bean Torrejas with Yogurt Sauce

These black bean torrejas with Yoplait® yogurt salsa are very easy to prepare. They’re also probably one of the best ways to get your kids to eat protein if they don’t like to eat meat. I put the black bean torrejas inside the bread and serve them as hamburgers for my young son. The Yogurt sauce doesn’t require many ingredients and you can also serve it with other dishes. It’s perfect to serve as a dip with vegetables.

Ingredients

  • 2 cups cooked beans
  • 3 tablespoons water
  • 1 lightly beaten egg
  • 4 tablespoons bread crumbs
  • Salt and pepper to taste
  • 1 teaspoon cumin powder
  • 2 tablespoons finely chopped cilantro
  • Spray cooking oil

Yogurt Sauce:

  • 1 lemon-flavored Yoplait® Greek yogurt
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons cream

Directions

    Preheat oven to 375° F.

    In a food processor, put the beans, water, beaten egg, salt, black pepper and pulse about 4 times.

    Add the bread crumbs and pulse again. Add salt and pepper if needed. Add the ground cumin and cilantro. Mix well until it forms a paste. Add more water if the mixture is very dry.

    Make the torrejas into patties and put them on a greased tray. Refrigerate for 20 minutes minimum.

    Meanwhile mix the ingredients for the Yoplait® sauce. Put in the refrigerator to serve with the torrejas.

    Bake for 12 minutes, turning halfway through cooking.

    Serve with yogurt sauce and salad.
