Directions

  • 1 Slice peppers in half, lengthwise. Seed and devein.
  • 2 In a medium pot, boil 8 cups of water. Add peppers and salt and let cook for 5 minutes. Remove from water and let drain on paper towels.
  • 3 Preheat oven to 350 °F.
  • 4 Heat oil in a large frying pan on medium-high heat. Add onions and sauté for 2 minutes. Add tomatoes, garlic, shredded chicken and orange juice. Season with chili powder, cumin, oregano and salt. Cover the frying pan and let cook for 5-10 minutes or until all the juices have evaporated. Remove from heat.
  • 5 Use olive oil to grease a baking dish.
  • 6 Place bell peppers on baking dish. Fill each half with the chicken mixture. Sprinkle with 2 tablespoons shredded cheese. Bake for 25-30 minutes or until the cheese starts to melt and turns gold.
  • 7 Enjoy!
