As a little girl one of my favorite dishes was salpicón. This is a cold dish made of different pieces of meat and seasoned with pepper, salt, onion, lime, etc. I remember that we would eat it often at my grandmothers, especially in the summer. As the years went by, I forgot about this tasty dish. It wasn't until my mom decided to prepare it that it again became part of my life as a family favorite. Salpicón is a versatile dish that can be enjoyed as an appetizer or as a side.

Directions

  • 1 Heat enough water to cover the meat in a pot. When it begins to boil lower the heat and let the meat cook with the celery, carrot and salt. Once ready, remove from the pot and let cool.
  • 2 While the meat cooks, peel the potatoes, dice and boil in water. Once cooked, let cool.
  • 3 When the meat is cold, chop and shred it how you like.
  • 4 Julienne the onion and chop the lettuce.
  • 5 Mix all the ingredient and add lime juice, salt, pepper and a bit of olive oil.
