Directions

  • 1 Preheat the oven to 350° F.
  • 2 Place the pepper halves on a baking tray and bake for 20 minutes.
  • 3 In the meantime, brown the bacon and onion in a pan over medium-high heat, until the onion begins to soften and the bacon is crispy. Add the chopped garlic and mushrooms, and cook until the mushrooms are well cooked.
  • 4 Take the peppers out of the oven and stuff each half with a large tablespoon of the bacon preparation. Add a raw egg and season with salt and pepper.
  • 5 Cover the peppers with aluminum foil and bake for 20-30 minutes, or until the yolks are cooked.
  • 6 Garnish with the tomatoes, avocado and fresh cilantro. Serve immediately.
