Baked chicken is one of those delicious meals that remind me of my childhood. I think my mother prepared it about a thousand different ways when I was a child. And that's the beauty of this chicken dish. It's so versatile that you can completely change its flavor and presentation with just a few ingredients. If you're a fan of artichokes, this recipe is for you. It's an amazing mix of chicken, artichoke, jalapeños, mustard, and herbs. Serve with rice and tortillas.

Ingredients

  • 1 whole chicken
  • 1/2 cup Progresso™ chicken broth
  • 2 tablespoons Dijon mustard (optional)
  • 4 garlic cloves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 2-3 jalapeños
  • 1 (14 oz.) can quartered artichoke hearts
  • 1/2 purple onion
  • 1 teaspoon olive oil

Directions

    Preheat the oven to 400°F.

    Separate chicken into 8 pieces, wash, clean, and dry with paper towels.

    In a container big enough for the chicken, mix the chicken broth, mustard (if desired), garlic, salt, pepper, and dried thyme. Dip the chicken in this mixture and stir until completely covered.

    Place the chicken pieces in a glass baking dish and bake at 400°F for 45 minutes. Every now and then, baste chicken with juices.

    As the chicken cooks, slice the jalapeños, open and drain the can of artichokes, and cut the purple onion into quarters.

    Heat the oil in a pan, add the jalapeños and sauté for one minute. Then, add the artichokes and onions, and sauté for 3-4 minutes more. Set aside.

    Once the chicken has baked for 45 minutes, pour the jalapeño, artichoke, and onion mixture over it. Lower the temperature to 275°F and bake for 20-30 minutes more, or until the juices run clear, and the internal temperature of the chicken has reached 165°F.

    To save time, buy the chicken already in pieces. It'll cost a little more, but will be so much more convenient.

    If you don't have thyme, you can substitute it with marjoram or parsley.
