Expert Tips

To save time, buy the chicken already in pieces. It'll cost a little more, but will be so much more convenient.

If you don't have thyme, you can substitute it with marjoram or parsley.

Directions

  • 1 Preheat the oven to 400°F.
  • 2 Separate chicken into 8 pieces, wash, clean, and dry with paper towels.
  • 3 In a container big enough for the chicken, mix the chicken broth, mustard (if desired), garlic, salt, pepper, and dried thyme. Dip the chicken in this mixture and stir until completely covered.
  • 4 Place the chicken pieces in a glass baking dish and bake at 400°F for 45 minutes. Every now and then, baste chicken with juices.
  • 5 As the chicken cooks, slice the jalapeños, open and drain the can of artichokes, and cut the purple onion into quarters.
  • 6 Heat the oil in a pan, add the jalapeños and sauté for one minute. Then, add the artichokes and onions, and sauté for 3-4 minutes more. Set aside.
  • 7 Once the chicken has baked for 45 minutes, pour the jalapeño, artichoke, and onion mixture over it. Lower the temperature to 275°F and bake for 20-30 minutes more, or until the juices run clear, and the internal temperature of the chicken has reached 165°F.
