Expert Tips

Cutting the stems off the asparagus is simple. Take each one in your hands and fold; the asparagus will break on its own.

One of my favorite seasonal vegetables is asparagus. These delicious veggies cook in a jiffy and only need a few ingredients to highlight their flavor. I prefer cooking them in the oven because they remain crunchy, and I can cook them while I set the table. This recipe includes one of my favorite vinaigrettes-balsamic-which has the perfect balance of sweetness and acidity. I hope you like it.

Directions

  • 1 Preheat the oven to 350° F.
  • 2 Cut the stems off the asparagus and discard them. Wash and strain the asparagus, and dry with a paper towel.
  • 3 Stir together the olive oil, balsamic vinaigrette, salt and pepper.
  • 4 Place the asparagus, onion and garlic in a baking tray. Pour the oil and vinegar mixture over them and stir until all the asparagus are completely covered.
  • 5 Bake for 10 minutes and serve immediately.
