Now that's school is back in session, many of us will be returning to the usual morning routine with the preparation of lunches and snacks, plus making sure all the homework is done. During this season, I like making simple snacks for when my kids return from school. This way I always know they're well fed and I have enough time to help them with homework. These bacon rolls are delicious and can be prepared in just a few minutes. I used low fat turkey bacon, but you can use chicken or any ingredient you prefer.

Directions

  • 1 Mix the tomatoes and mayo in a small bowl.
  • 2 Spread 1/4 of the mixture on each tortilla. Season with salt and pepper.
  • 3 Fry the bacon, let cool and chop.
  • 4 Place the lettuce and bacon over the tomato and mayo mixture.
  • 5 Unroll the tortilla and cut in half diagonally. Now you have an easy snack that's the perfect after school treat for your kids.
